homemade granola

Granola is one of those things I always crave but when at the grocery I can never get myself to fork over the $10.00 for a tiny bag.

Solution? Make it.

3 cups old fashioned rolled oats

1 1/2 cups chopped raw pecans

1 cup hulled, raw pumpkin seeds

1 cup coconut chips

1/2 cup pure maple syrup

1/2 virgin coconut oil (melted)

1/3 cup packed, light brown sugar

1 tsp. kosher salt

1 tsp. ground cinnamon


Heat oven to 350 degrees.

In a large bowl mix  oats, pecans, pumpkin seeds, and coconut chips. In a small bowl combine maple syrup, coconut oil, brown sugar, salt, and cinnamon. Mix with a fork untile combined. Drizzle over the dry ingredients. Mix thoroughly.

On a non-stick baking pan, spread out the granola. Bake for 25 minutes (or until crisp). Use a spatula to turn oats as you go.
