My mama makes the MOST delicious blueberry coffee cake.
The only issue is that said coffee cake is not portable. So this week I used her recipe and turned it into muffins.
3/4 cup sugar
2 cups all-purpose flour
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup milk
2 cups blueberries (fresh are best!)
Preheat the oven to 375 degrees. Cream together butter (softened), sugar and egg. Add flour, salt, baking powder and milk (alternating dry ingredients with wet ingredients).
Stir until well- blended. Carefully fold in the blueberries.
Spoon into muffin pan. Now on to the topping...
3 tablespoons fluor
2 teaspoons cinnamon
3 tablespoons butter.
Mix together topping ingredients using a pastry cutter or fork. Sprinkle topping over muffin batter.
Bake at 375 for 30-40 minutes. Enjoy!
